Spur-of-the-Moment CREAMY MACARONI SALAD
1-2 cups dried macaroni pasta (depends how many you're making it for) ~ Bring a large saucepan of salted water to a boil on medium-high heat ~ then add the pasta and stir. Let it cook while you put together the rest of the ingredients.
DRESSING:
about 1/4 to 1/3 cup mayonnaise (mine has olive oil in it) ~ depends how much pasta you're making
2 to 4 TB plain yellow mustard ............................................................1-2 tsp. Kosher salt
about 1/4 cup chopped white or yellow onion................................1-2 TB chopped fresh parsley
1-2 sweet colored mini-pepper (seeded & diced)..................................1/2 to 1 tsp. pepper
about 3/4 to 1 tsp. smoked paprika
....and then I decided to also add about 1 tsp. of Creole seasoning (Tony Chachere or Zatarain's)
Whisk together the mayonnaise, mustard, salt, paprika and Creole seasoning in the bottom of a medium bowl. Mix in the onion, chopped pepper and parsley. ... As soon as your pasta is done, drain it and add to the bowl too. Stir to combine well (adjust salt, pepper & Creole seasoning, if needed).
And, now you have a fast side dish that should serve 4-6 people. You can serve it warm, but it's even better if you chill it in the refrigerator. And, this will keep for days!
