Smoky HONEY CITRUS MARINADE
about 1-1/2 to 2 lbs. of beef steak (thinner cuts like skirt steak, or thicker cuts like T-bone)
About 1/2 cup citrus juice (I like the Simply brand ~ Tropical here, but Orange Mango is good too)
about 1 TB liquid smoke (Colgins has the most flavor ~ I like hickory or mesquite)
about 1/2 cup BBQ sauce w/honey (I like Stubb's best ~ this was Honey Pecan) ~ or mix together about 2-3 TB honey with your favorite good-quality BBQ sauce to equal 1/2 cup total
about 1-2 tsp. Kosher salt......................................................about 1-2 tsp. cracked black pepper

In a small bowl, whisk together all of the sauce ingredients. Put your steak(s) into a pyrex pan and pour the marinade over it. Turn the steak(s) a couple of times, so that it's well coated.
If you're grilling thick steaks, it's best to put them into as small a pan as they will fit in, so that the marinade covers them as much as possible. Only necessary to leave them in there for 15-30 minutes (although several hours is fine too).
If you're grilling thinner, leaner steaks (skirt steak, flank steak), then I put it into a larger pyrex pan and spread the steaks out. Let them marinate for several hours (or even over-night).
My husband does all of the actual grilling (I do the prep work). He likes to sear the steaks on a higher heat (to get grill marks going one direction) ~ then he'll move them to a section of the grill with lower heat (and turn the steaks about 1/4, to get criss-cross grill marks). The length of time depends on how thick the steaks are, and how you like your steaks cooked. (Note: He likes all his steaks medium-rare, but I like thick steaks very rare {MOO!}. However, the thinner cuts are better at a medium-rare {still pink inside} because they seem more tender that way.)
