CHOCOLATE dipped PEANUT BUTTER Stuffed DATES
10-12 whole pitted California or medjool dates (or as many as you want)
2-3 TB peanut butter (smooth or crunchy)
about 4 oz. chocolate (dark or semi-sweet chips ~or~ melting chocolate ~or~ bars)

Cut a slit down the side of each pitted date and gently spread them open. Fill each date with about 1/2 tsp. peanut butter and close back up. Lay them out on a piece of waxed paper.
Melt the chocolate for about 60 seconds on HIGH in your microwave (in a glass bowl); stir until it's really smooth. (TIP: If it seizes up, add some Crisco and heat back up about 10 seconds, then stir it all up well until it's smooth) ** Dip the filled dates in the melted chocolate to cover (I used 2 small teaspoons to roll and lift them out). Put them back on the waxed paper and let the chocolate harden (it should take about 5 minutes, or you can stick them in the refrigerator to harden).
These are best if you keep them in the refrigerator. They'll have a smooth peanut butter center then, with a crisp chocolate coating.
