These are BIG and PUFFY ~ made using a smaller ice cream scoop or large cookie scoop
Glazed LIME MARGARITA COOKIES
1 box cake mix (white is best for color ~ butter & yellow are fine, but may need green food color to make it "greener"
about 1-2 TB LIME jello powder ........................2 TB Tequila
1 stick (8 TB) melted butter................................2 large eggs
1 cup flour (but may need up to 1/2 cup more)
about 4 TB Sparkling or coarse sugar (I also added about 2 TB light green sugar)
about 4 TB Kosher (or other coarse salt)
Mixed together in small bowl, and set aside
GLAZE: about 3/4 cup powdered sugar ~ whisked with about 1 tsp. TEQUILA and 1 tsp. lime juice. To make it thicker, add a little more powdered sugar. To make it thinner, add a little more Tequila or lime juice. ** Set aside.

Preheat oven to 350. Line 2-3 baking sheets with parchment paper and set aside.
Put all of the cookie ingredients into your mixer bowl and gently mix together (on low) until the flour is incorporated ~ then put on medium high and mix about 30 seconds. You should be able to tell then if you need more flour (or food coloring). If your finger sticks to the cookie dough, add 2-3 TB flour and mix in ~ then test again for stickiness. Your finger should easily come off without the dough sticking to it (may need another TB or so).
Make your giant cookie balls and put 5-6 (staggered) to a cookie sheet. Roll them in the sugar/salt mixture and put them back onto the cookie sheets. (I make all the balls first, so I can go back and add/subtract to get the balls all the same size.) Then bake for 8-11 minutes (mine were fine at 9 min.) ~ they should be a little firm on top, but a little give. They'll firm up more on top when they cool.
I put them onto paper on the counter and drizzled the glaze on top (yes ~ while they were warm) and sprinkled more of the sugar/salt mixture on top. Makes about 1 dozen (more or less, depends on how big you make them)
