MARSHMALLOW CREAM filled CHOCOLATE COFFIN CUPCAKES
3 cups flour……………………………....…...2 cups granulated sugar
1/2 cup dark unsweetened cocoa powder
2 tsp baking soda………………….…..….....2 tsp. instant coffee powder
1 tsp salt…………………………………..….3/4 cup vegetable oil
2 tsp pure vanilla extract………..……........2 cups water
2 TB plain vinegar……………………
MARSHMALLOW CREAM Filling
1 Jar Marshmallow Fluff (7oz)…….............1 tsp. pure vanilla extract (clear is best)
3-4 cups powdered sugar
4 TB softened butter………………….......…1/2 cup vegetable shortening
Decorations:
About 30-36 mini Oreo cookies
Gummy worms and/or spiders
Candy bones and/or eyeballs
Black decorator gel or glitter

Preheat oven to 350. Line 30-36 cupcake tins w/paper liners (depends how big your cupcake holes are ~ silicone are a little larger than metal).
Whisk flour, sugar, cocoa, soda and salt together. Add remaining batter ingredients and WHISK together until well blended (stir, don’t beat). Combine filling ingredients together, until well blended, in another bowl. Fill 30-36 cupcake papers almost full of cupcake batter Bake at 350 for 25-30 minutes.
Let them cool completely on a rack. Then slice the entire top off the cupcakes at the top of the liner. Pile some filling in each one (you can pipe it in or just put it in with a small spoon). Now stand the Oreo cookie on edge and put the top of each cupcake against the Oreo cookie as the “open top” of the coffin (you might want to use some filling as the “glue” for the top of the coffin against the Oreo). Decorate the inside of the coffin as desired.
