ORZO FETA SALAD w/ HONEY LEMON DRESSING
4-6 oz. dry orzo pasta (cooked per package and drained, but NOT rinsed)
1/4 cup pitted Kalamata olives, sliced
1/4 to 1/2 cup crumbled feta cheese……...…..2 TB capers
1 TB chopped fresh parsley………………………..About 3-4 fresh basil leaves, chopped
About 1/4 cup bell pepper (any color or mixed), small diced (minced)
Optional: 2-4 TB white, yellow or green onion, finely diced
HONEY LEMON Dressing:
1/4 cup lemon juice……………………………….….2-3 tsp. honey (depends how sweet you want it)
1 tsp. Kosher salt……………………………………..1/2 tsp. black pepper
1 tsp. garlic, crushed or minced…………...…..2 TB extra-virgin olive oil

HONEY LEMON DRESSING:
Put lemon juice, salt, pepper, honey and garlic in your food processor, and slowly drizzle in the olive oil while it’s processing. Taste and adjust salt & pepper, if necessary.
Gently toss the drained orzo with the rest of the salad ingredients. Then drizzle just enough salad dressing to lightly coat. Toss gently again. Serve immediately or refrigerate until serving time.
