North Texas is in the path of 100% totality for the Solar Eclipse on April 8, 2024. Here's a citrus VODKA cocktail to celebrate the event. The POM (pomegranate juice) on the bottom is dark ~ while the other liquids are sunny bright ~ with an orange slice floating on top.
TOTAL ECLIPSE COCKTAIL
1 oz POM (pomegranate juice)
ice
2 oz. Sparkling Blood Orange Lemonade flavored water (Polar brand)
1.5 oz ABSOLUTE MANDARIN (orange vodka) ~or other orange vodka
2 oz. pineapple juice (I had papaya-pineapple nectar)
slice of orange or lemon
TIP: 1 oz. = 2 TB

Pour the POM into a tall glass ~ add ice (I had 3 thin rectangle cubes). Slowly add the other ingredients in the order listed. Do NOT stir (so the pomegranate stays on the bottom)
NOTE: I found the Polar brand sparkling water @ Walmart. No artificial flavoring, and no sweeteners of any type at all = 0 calories. (YAY! amazing that it's 0 calories without artificial sweetener!) There are several other flavors too.
