EGGNOG LOG COOKIES
1 cup (2 sticks) REAL unsalted butter, softened
3/4 cup sugar ………………………. 2 tsp vanilla extract
1-2 tsp RUM extract (could also use brandy extract)
1 egg ………………………………....... 1 tsp ground nutmeg
1/4 tsp salt……………………….……3 cups flour
2-3 teaspoons prepared eggnog
Frosting:
1/4 cup real butter, softened
3 cups powdered sugar……………..1 tsp vanilla extract
1/2 to 1 tsp RUM extract (can use brandy extract)
2 TB prepared eggnog ………………ground nutmeg

In bowl, cream butter and sugar; add nutmeg, egg and extracts ~ mix thoroughly. Stir in flour; mix well.
Shape pieces of dough into logs, which are about 1/2" in diameter (it might be necessary to chill dough for easier handling). Flatten the logs down with your hands, so that they're about 2" wide. Cut each log (on the diagonal) into about 1" slices and put on lightly sprayed (I like parchment paper) cookie sheets.
Bake at 350 for 10-13 min (should not be browned). Cool on wire racks.
Meanwhile, make frosting: Cream butter until light & fluffy; add 2 cups sugar & extracts; mix well. Beat in eggnog & remaining sugar. Frost cookies. Draw lines down each cookie with tines of fork and dust with nutmeg. Makes about 6 dozen
