This is a fairly plain spice cake, to cut into wedges for breakfast on New Year's Day. Whoever gets the coin inside will have prosperity in the New Year **

1 cup unsalted butter, softened (1 stick)
1-3/4 cups granulated sugar ………….................…. 5 large eggs
2 TB milk ………………………………….......................…. 1 tsp vanilla extract
1/2 tsp cinnamon, ground …………….................….. 1/2 tsp nutmeg, grated
1/4 tsp cloves, ground …………………...................….1 tsp baking powder
1/4 tsp salt ……………………………...............…......….. 3 cups flour

2 quarters, washed

2 TB powdered, sparkling or turbinado sugar
2 TB sliced almonds (optional)
Cream butter and sugar. Add remaining ingredients. Pour batter into 2 greased/sprayed 8” round cake pans, or 1 greased/sprayed 10” round cake pan. Press a coin into each cake. Sprinkle with almonds and sparkling sugar. Bake in preheated 325F oven for 25-30 minutes or until toothpick comes out clean. Cool completely in the pan on a rack. Cover and store at room temperature. Makes about 12 servings
