These rich, creamy candies are super easy to make * no cook ** CHOCOLATE covered PEANUT BUTTER **
NOTE: For HALLOWEEN, stick a big chocolate chip (tip side down) or candy eye into the top to resemble an eyeball. |
1-1/2 cups peanut butter (chunky or smooth ~ I like chunky)
1/2 tsp vanilla extract ………………..6 cups powdered sugar
6 cups semisweet or dark chocolate chips
1 TB shortening (i.e. Crisco)............ 1 cup butter, softened (2 sticks)

In a large bowl, mix together the peanut butter, butter, vanilla and powdered' sugar. The dough will look dry. Roll into 1" balls and place on a waxed/parchment paper-lined cookie sheet.
Press a toothpick into the top of each ball (used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.

Meanwhile, melt chocolate chips with shortening in a microwave-proof bowl ~ stopping to stir every 30 seconds or so, until completely melted and smooth. (smaller diameter with taller sides works best for dipping later)
Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving. Makes 30-36
IMPORTANT: Keep peanut butter balls FROZEN until you use them (the colder, the better) and it’s easiest when the chocolate is VERY HOT
