6 hard-boiled eggs ~ peeled and roughly chopped
1 TB mayonnaise (mine has olive oil in it)
1 TB sour cream or Greek yogurt
2 tsp plain yellow mustard…………………………1/2 tsp. turmeric
1 tsp fresh, chopped parsley
2 TB finely chopped onion…………………………1/2 tsp. paprika
2 tsp. Kosher salt ……………………………………1 tsp black pepper
Optional ADD-INS:
2-3 slices of bacon ~ cooked crisp and crumbled (for us, this is a MUST)
2-3 stalks of celery, finely chopped
1/2 large dill pickle, finely chopped

In a large bowl, mix together all sauce ingredients (except eggs, onion, bacon, celery and pickles). Gently fold in the egg, onion and any add-ins. Sprinkle the top with more paprika, if you want (just for looks)

This is a very chunky egg salad, and could be eaten as-is for lunch (nice on a lettuce leaf). If you want to use it for sandwiches, you can chop the eggs smaller or mash them with a fork.
