TIPSY TEX-MEX Crockpot PORK ROAST
1 large pork tenderloin roast (mine was 3.51 lbs.)
1 bottle of beer (whatever you like)
1 package of taco or fajita mix
Optional: fresh chopped cilantro (as garnish)

I didn't spray the inside of my crockpot because nothing seems to stick to the ceramic, but you can certainly spray yours if you want to. Then put the pork roast into your crockpot and sprinkle the package of taco mix over it. Pour the beer over and around the pork roast. Turn the crockpot on LOW and let it go for 8-10 hours (if it goes a little longer, that's fine too).
There are optional ways to serve this. If you let it cook longer, then it shreds easily. You can add BBQ sauce and eat as pulled pork on buns (good with cole slaw on the buns too).
SLICED PORK ROAST with GRAVY: In the photos, I took it out after about 8-1/2 hours and sliced it. I took 1 cup of the hot liquid out of the crockpot; put it into a pyrex pint measure and whisked in 2 tsp. of cornstarch. Microwaved that for 30 seconds; whisked again; then microwaved for another 30 seconds; and whisked again. It was a wonderful rich gravy to spoon over the sliced pork roast, and also over the white rice that I served with the pork roast.
I like to sprinkle with some fresh chopped cilantro before serving.
Good over white rice, mashed potatoes, or on hamburger buns (like pulled pork).
