THANKSGIVING DEVILED EGGS ** Turkeys and Pumpkins
12 hard-boiled eggs
1/2 cup mayonnaise (mine has olive oil in it)
1/4 cup yellow or Dijon mustard ……………………………..1-2 tsp Kosher salt
1 tsp curry powder (turkeys) ~OR~ 1 tsp. smoked paprika (pumpkins)
pepper to taste
TURKEY garnish:
1 walnut half for each turkey
red, yellow and/or orange sweet mini peppers or bell peppers, thinly sliced and cut about 1/2" long
*** Stand up the walnut half in the front. Cut a tiny triangle of red pepper for the beak. Stand up the slices of colored peppers behind the walnut for the tail feathers.

PUMPKIN Garnish:
smoked paprika....................................................................green onion, cut about 1/2"
*** Sprinkle the extra smoked paprika over the yolk. Stick the green onion piece at the top for the stem. If you want, you can lightly draw lines in the colored yolk with the edge of a knife.
Cut the eggs in half and put the yolks into a bowl with the other ingredients (except garnish). Mash and mix until completely smooth. Fill the egg whites with the egg yolk mixture.
