6 assorted summer squash, cut into chunks or slices
about 1/4 red pepper, chopped
2-3 tsp fresh chopped herbs (parsley, oregano, rosemary, thyme and/or basil)
1-2 tsp Kosher or sea salt
2-3 TB butter, cut into little pieces
Put squash and red pepper into a microwaveable casserole dish; sprinkle squash with salt and herbs; and dot with butter.
Microwave, covered, on HIGH for 6-8 minutes (no need to put water in the dish). Stir and serve. Serves 2-4
VARIATION: Substitute fresh chopped cilantro for the parsley and add 1/2 tsp. chili powder, plus 1/2 to 1 whole jalapeno pepper (seeded and finely minced) … you can also add 1-2 fresh chopped Roma tomatoes to either variation
