1 frozen unbaked pie shell
1 (6 oz) box sugar-free instant chocolate pudding mix
1 cup sugar-free liquid coffee creamer ** (real milk has sugar in it)
1 tsp vanilla or rum extract
1/4 cup sugar-free chocolate chips (Hershey's ~ by the other chocolate chips at store)
1/4 cup sugar-free chocolate chips and/or shaved unsweetened chocolate (GARNISH)
2 (8 oz each) containers sugar-free Cool Whip Topping
Bake pie crust according to directions on back of package. Cool.
Meanwhile, whisk milk, extract and pudding mix together in a bowl. When well blended, add 1/4 cup chocolate chips; then half of Cool Whip. Once blended well, pour into baked pie crust and smooth. Let set for 10 minutes in refrigerator. Top with remaining Cool Whip and chocolate chips and/or shaved chocolate. Store in refrigerator.
