with Garlic Cheese Grits
OVEN-FRIED CATFISH:
about 1 lb. catfish fillets.................................................. 1 TB. extra-virgin olive oil
2 tsp. Creole seasoning (Tony Chachere’s or Zatarains)
1 tsp garlic powder............................................................ 1 tsp. Kosher salt
1/2 tsp. pepper.................................................................... 1 egg
3/4 cup Panko breadcrumbs.......................................... 1 cup cornmeal
2 TB. water............................................................................olive oil non-stick spray

Preheat oven to 400. Line a baking sheet with foil and lightly spray with non-stick spray.
Mix seasonings with flour and panko in a flatter bowl. In another flatter bowl, lightly beat the egg with 1 TB. olive oil and water with a fork. Dip fish into the egg wash and lightly dredge in cornmeal mixture. Repeat by dipping again in the egg wash, then back into the cornmeal mixture.
Lay the coated fish on pan, and oven-fry for 10 minutes. Then, turn the fish over and oven-fry on the other side for about 10 minutes. Take the pan out of the oven and lightly spray the fish with the olive oil non-stick spray (on the top side) and put back into the 400 oven for another 5 minutes. (NOTE: Your oven time may vary, depending on how thick your fish fillets are ~ mine were fairly thick).
If you want, you can serve with lemon wedges or tartar sauce. Serves 2-3

easy GARLIC CHEESE GRITS:
1/2 cup INSTANT grits.....................................................2 cups water
1 TB. crushed or minced garlic......................................1-2 tsp. Kosher salt
1 cup shredded mozzarella or provolone cheese (NOTE: mild white cheese goes better with fish ~ if you're making these to go with pork or beef, you can use orange cheese).
3-4 TB. butter
Put the grits, water, garlic, salt and butter into a saucepan and heat to boiling. Lower the temperature to a low simmer and cover. Cook for about 15-20 minutes (until nearly all of the water is gone). Remove from heat and stir in the cheese until it's melted through. If you want, you can add more butter too. Serves 3-4
