Snickerdoodle Blondie Cookie Bars
1/2 Cup (8 TB) unsalted butter, softened……........…..1/2 cup granulated sugar
1/2 cup dark brown sugar…………………………...............1 egg
1-1/2 tsp. vanilla extract…………………………............…..1/2 tsp salt
1 tsp. baking powder………………………………...............…1 tsp. cinnamon
1-1/4 cup all-purpose flour
TOPPING:
2 TB granulated sugar……………………………...................1-1/2 tsp. cinnamon
Whisk together in small bowl and set aside.

Preheat oven to 350. Generously spray an 8” square pan with non-stick baking spray (containing flour); set aside.
In a large bowl or stand mixer, cream together butter and sugars. Mix in eggs and vanilla, followed by dry ingredients. Mix until smooth and no streaks remain. Press mixture into an even layer in prepared baking pan (I use the back of a dampened spoon). Sprinkle with cinnamon-sugar topping mixture.
Bake for 22-27 minutes or until a cake tester comes out clean. (time depends on your oven and color of your pan)
