3-4 shucked ears of corn....................................buttery non-stick spray
1 TB. McCormick's Baja Chipotle marinade
2 TB. softened butter......................................... 1 tsp. garlic powder
2-3 tsp. honey..................................................... 1 tsp. Kosher salt
1/2 to 1 tsp. Mesquite or Hickory liquid smoke
about 1 TB. chopped fresh cilantro
Cut a sheet of heavy-duty aluminum foil for each ear of corn. Lightly spritz each sheet of foil with the non-stick spray.
Mix together the rest of the ingredients (except corn) in a small bowl. No need to whisk this ~ I like to use a small spoon because if there are little lumps of butter in there, they just melt into the corn while it's grilling. *** Smother all sides of each ear of corn with the mixture. Wrap the foil tightly around the corn.
Throw the corn onto your BBQ grill, along with whatever else you're grilling. It's usually about 8-10 minutes per ear, turning it over when you turn your main dish ~ but time could vary depending on hot your grill is.
Carefully peel off the hot foil (may want to use oven mitts) and enjoy!
NOTE: for 2 of us, I make 3 ears of corn (I eat one, and my husband eats 2)
