Simple WINTER FRUIT SALAD
1 large apple (If you like tart, use a green apple ~ red apples are sweeter {Gala and HoneyCrisp are good)
1 large pear (get one that isn't rock-hard ~ red & brown are good, but you may need 2 because they're smaller than Bartlett. I try to find Bartlett pears that have a rosy blush to them)
1 orange or large tangerine
about 1/4 cup lemon juice
about 1 TB honey
quick sprinkle of cinnamon
***
Whisk together the lemon juice, honey and cinnamon in the bottom of a medium bowl (large enough for all of your fruit).
Leaving the peel on, dice the apple up into cubes that aren't larger than about 1". As you dice it, put the cubes into the bowl with the lemon juice and gently fold them in (so that the acid in the lemon juice will keep them from turning color).
Next, I did the pear the same way (but it won't turn color as fast as an apple could). I peeled and cut the orange over the big bowl, so that any juice that came out of it would go into the bowl.
Then, using a rubber scraper, just fold everything together so that all of the cubes are coated with the lemon juice & honey. I like to do this early in the day, so that the honey has time to add a little sweetness to the fruit.
VARIATION: If you find fresh berries, you can certainly gently fold them in at the end too!
