RED VELVET GOOEY BUTTER CAKE
1 box RED VELVET cake mix ~or~ WHITE CAKE mix plus 1-2 tsp. RED VELVET extract (I found it at Walmart on the cake baking aisle {not in the grocery section})
2 eggs....................................................................1 stick unsalted butter (8 TB), melted

8 oz. cream cheese, room temperature
2 eggs
1 box powdered sugar (reserve 1/2 cup) ~ about 2-1/2 cups
OPTIONAL: Seasonal sprinkles

Preheat oven to 350. Spray a 9x13” pan with non-stick baking spray (containing flour).
Beat together cake mix, 2 eggs, extract & butter; spread evenly in pan. It will be very thick (I use the back of a dampened teaspoon to smooth it out) and may take a few minutes to beat it smooth with your electric mixer.
Beat together cream cheese, 2 eggs and powdered sugar (less 1/2 cup) until smooth. Spread over top of batter. If you want sprinkles, add some to the top now, before baking (they won't stick later). They'll just peek through the powdered sugar on top later.
Bake at 350 for about 22-28 minutes, or until golden brown on top (if it rises, falls & cracks, don’t worry about that). When cool, sprinkle 1/2 cup powdered sugar on top. Cut into squares.
