1/3 cup pumpkin
1/4 cup balsamic or cider vinegar
1 tsp crushed garlic
1 tsp fresh minced rosemary
1 tsp sugar ~or~ 1 tsp. regular white Splenda
1/2 tsp Kosher salt
1/4 tsp pepper
1/4 cup extra-virgin olive oil (a little more, if you want)
1 TB plain white vinegar (or more, if you like it very “tangy”)
Whisk all ingredients together well in a bowl (or pulse together in your food processor). Use as a salad dressing
