Extra-lean ground beef with raw white rice and a few spices * baked in a tomato sauce for about 45 minutes. ** Good over wide noodles or mashed potatoes ~ or just add a green salad.
PORCUPINE MEATBALLS
1 lb. lean ground beef
1/2 cup raw white rice (regular ~ not instant)
1-1/2 cups water
1/3 cup finely chopped onion
1 tsp salt
1/2 tsp celery salt
1/4 tsp garlic salt
1/8 tsp pepper
15 oz. tomato sauce
2 tsp Worcestershire sauce

Heat oven to 350. Mix meat, rice, 1/2 cup water, onion, salts, garlic powder & pepper ~ shape by heaping teaspoons into balls. Place meatballs in ungreased 9” pan. Stir together remaining ingredients with remaining 1 cup water and pour over meatballs.
Cover with foil and bake for 45 minutes. Uncover and bake an additional 15 minutes. Serves 4-6
