1 frozen or refrigerated pie crust
1 lb. ground beef (I like 96/4 sirloin)
3/4 cup chopped onion ………...........…..... 4 eggs, slightly beaten
3 TB milk …………………………...................... 1 tsp salt
1-1/2 cup grated cheddar or mozzarella cheese
1-2 tsp oregano …………………....................1-2 tsp minced rosemary
1/4 tsp pepper ……………………...................1 tomato, sliced
1 (8 oz) can pizza sauce …………............... fresh sprig of Rosemary
1 tsp crushed garlic
***
Bake pie crust at 400 until lightly brown (probably 6-8 minutes).
Meanwhile, break up meat and brown in a skillet with the onion ~ drain fat. Combine eggs, milk, 1 cup cheese, salt, oregano, garlic, pepper and minced rosemary ~ stir into meat mixture. Turn mixture into baked pie shell.
Reduce oven temperature to 325 and bake 30-45 minutes (or until knife inserted in center comes out clean). Spread pizza sauce over the top; lay sliced tomatoes on top; sprinkle remaining cheese on top and put the fresh sprig of rosemary on top (if available) ~ bake an additional 10 minutes.
Let sit a few minutes on the counter, then cut into wedges to serve
