Just a simple fruit salad, using about 2-3 cups of fresh PINEAPPLE chunks, with 2 fresh NECTARINES or PEACHES (cut into half, then sliced) and about 1 cup of fresh RASPBERRIES or BLUEBERRIES.
In a small bowl, whisk together about 1-2 TB. fresh pineapple juice with 1 TB. honey and 1-2 TB. fresh mint leaves (finely slivered). Mix with the fruit until evenly covered. Refrigerate until serving. |
