PINEAPPLE COCONUT RICE
1 cup uncooked long grain rice
1 cup coconut water or milk (it will be creamier with the milk)**
3/4 cup water
1/4 cup pineapple juice (add water if you don't have enough in can or pineapple)
1/4-1/2 cup pineapple, fresh or canned tidbits (cut into small pieces)
1 TB shredded coconut (unsweetened is best)
1 small sweet red pepper, minced
1-2 green onions, chopped
1 TB chopped macadamia nuts (optional)

Combine rice, coconut milk, water, and pineapple juice and cook in a saucepan on your stove, per package instructions for the rice.
When the rice is cooked, stir in pineapple, coconut, red pepper, green onions and macadamia nuts.
** NOTE: My husband isn’t a huge coconut fan, and the coconut water has a much lighter coconut flavor than the milk. Also, the coconut water is lower in calories than using milk.
You can used fresh or canned pineapple, with the juice.
