ORANGE or PEACH CHEESE BALL
about 1-1/2 cups shredded Cheddar or orange/blend (my preference) cheese
4 oz. cream cheese, softened
1/4 cup peach preserves or orange marmalade
1/8 tsp. cinnamon
whole cloves (1 for each cheese ball) and a few fresh mint leaves for each cheese ball
Beat cheeses, preserves and cinnamon in medium bowl until smooth (or pulse in food processor). If it seems way too sticky, add up to 1/2 cup more cheese.
Cover and refrigerate 2-3 hours until cheese is firm enough to shape. Shape in 1 large (or about 8-10 mini) round peach or orange; place on serving plate. Stick a whole clove into one side (as the bottom of the fruit), and stick the mint leaves on top. Serve with assorted crackers. Serves 8-10
Note: I prefer an orange/white cheese blend because it gives it little texture and color ~ but you might prefer all Cheddar.
