Monster PEANUT BUTTER COOKIES
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar or Splenda……………..............1 egg
1/2 cup dark brown sugar ~or~ 1/4 cup brown Splenda + 2 TB flour
1/2 cup creamy or crunchy peanut butter
1 tsp. pure Vanilla extract…………………………...............…1-1/2 cups all-purpose flour
1 tsp. baking soda (add 1/2 tsp. if using Splenda)……………....1/4 tsp. salt
1 plastic lid about 3" across (not metal, because you'll burn your hand)

Preheat oven to 350. Line 2 baking sheets with parchment paper & set aside.
Cream butter and sugars together in electric mixer bowl. Add peanut butter, egg, and vanilla. Beat well and then scrape down the bowl and paddle.
Whisk together the flour, baking soda, and salt. Add to the butter mixture all at once and mix just until it’s all incorporated..
Scoop dough onto the baking sheets with an ice cream scoop (or about 2 heaping tablespoons). (TIP: I spray the ice cream scoop with non-stick buttery spray first.) Roll into a ball in your hand and put 6 onto each baking sheet.
Bake for 5 minutes. Then take the sheet(s) out and flatten down each cookie with a plastic lid (that's about 3" across). Put back in and bake for another 5-7 minutes, or until just set. Let the cookies cool on the baking sheet a few minutes before removing to a rack or paper to cool completely. Makes about 12 large cookies
