I like to make this MICROWAVE PUDDING, from scratch, for spur-of-the-moment desserts. It's SO much better than the stuff you make up from a package, yet really fast and EASY ** You can do CHOCOLATE * Vanilla * BUTTERSCOTCH * or even BANANA NILLA Pudding ** It can even be made SUGAR FREE, if you want * |
3/4 cup sugar (or equal amount regular Splenda)
2 TB cornstarch
1/4 tsp salt ………………....................… 2 cups milk
2 squares unsweetened chocolate (optional)

Whisk all together in a 3-qt bowl and microwave for 5-6 minutes (whisking at 2 to 2-1/2 minute intervals). Pudding should be thick and smooth. Remove from microwave and:
Lightly beat 1 egg in a small bowl. Add about 1-2 TB of hot pudding and whisk into egg. Then whisk the egg mixture into the rest of the pudding. Microwave another 1-3 minutes (only took me 1 minute. Remove from microwave and whisk butter & vanilla, until butter melts.
1-2 TB butter …………………............... 1 tsp vanilla extract
Ladle into 3-4 serving dishes (or leave in large bowl) and refrigerate.
VARIATIONS:
Vanilla * omit the chocolate squares
Butterscotch: use brown sugar (or brown Splenda) instead of white sugar
Can substitute 1/4 cup flavored liquid coffee creamer for part of the milk.
BANANA: Mash 1 banana very well, with 1/2 tsp. lemon juice and 2 drops yellow food coloring. Add with 1/2 tsp caramel extract when you whisk in the butter. Layer with Nilla wafers and another sliced banana.
