4 ears of fresh corn on the cob, husks and silk removed
1 TB extra-virgin olive oil…………………………….1-2 tsp. Kosher salt
1/4 cup butter, softened………………………………1 TB garlic powder
1/2 tsp. Hickory or Mesquite liquid smoke………..1 tsp. cayenne pepper
2 TB paprika (smoked is best)……………………….1-2 TB chopped cilantro
Preheat the BBQ on medium heat. Lay out 4 12” squares of aluminum foil.
In a small bowl, mix together all ingredients (except corn). Put an ear of corn on each piece of foil and heavily coat with the butter herb mixture. Tightly fold the foil around each ear of corn.
Put corn packets on the grill and cook for 12-15 minutes turning every 5 minutes or so.
