1-2 fresh pears (I like red or brown best) ~ leave peel on ~ thinly sliced
2 tsp. Spicy Brown mustard (Dijon is fine too)...........................1-2 tsp. Kosher salt
1 tsp. extra-virgin olive oil......................................................1 TB pure Maple Syrup
about 1/2 tsp. black pepper....................................................2 TB apple cider vinegar
1/4 small head of green cabbage, thinly sliced

In a large bowl, whisk together the mustard, salt, maple syrup, apple cider vinegar, pepper and olive oil.
Try to slice the pears very thinly, as close to the cabbage slices as you can get (a long serrated knife works well). Put them into the vinaigrette dressing and toss to coat, while you slice the cabbage (the apple cider vinegar will keep them from turning brown). Then add the sliced cabbage and toss everything to coat well.
Refrigerate. This should serve about 4-5 people
