1 cup cantaloupe, diced to 1/4" (about 1/4 medium cantaloupe)
1 fresh mango, peeled, seeded and small diced
1/4 cup diced red onion
2 TB chopped fresh cilantro
1 medium jalapeno pepper, seeded and minced
2 TB fresh lime juice
1/2 tsp Kosher salt
1/4 tsp chili powder
Combine all ingredients. Toss well and serve. Makes about 2 cups salsa.
TIP: If your cantaloupe and/or mango isn't as sweet as you'd hope, you can add about 1 TB light agave nectar or honey to the salsa, and mix it up really well in there.
