HERB STUFFING CHICKEN or TURKEY BURGERS
1 pound lean ground chicken or turkey
2 cups stuffing mix………………………..…1 egg
(crunch up the stuffing mix so no large pieces ~ any stuffing mix is fine except cornbread
1 TB extra-virgin olive oil
1 tsp. pepper…………………………………...2 tsp. dried sage, crushed
1 tsp. dried thyme……………………….…..1 tsp. dried tarragon
1 TB fresh parsley, chopped……………...1 tsp. honey or champagne mustard
3-4 buns (optional)…………………...……….lettuce & sliced tomatoes (optional)

Put ground chicken/turkey into a large bowl with stuffing mix, olive oil, egg, pepper, herbs and mustard. Mix together with your hands (don’t over-mix) and form into 3-4 patties. (The texture of ground chicken is really "mushy", but it will still stay together when you grill it.)
Grill outside on in a grill-pan inside ~ 5 minutes per side on hot grill or sprayed grill pan (on medium-high).
Eat as-is or serve on buns w/lettuce & sliced tomato. The only condiment necessary would be some more honey mustard
