1/4 cup REAL butter, softened
4 oz. cream cheese, softened
1 tsp vanilla extract
4 cups powdered sugar
2-1/2 cups flaked coconut
1 TB ground cinnamon AND / OR 1 TB unsweetened cocoa powder
slivered or chopped almonds (optional)
In a medium bowl, beat butter and cream cheese together THOROUGHLY until very smooth. Add the vanilla and powdered sugar; beat until smooth. Mix in coconut (use hands, if necessary). Refrigerate at least 30 minutes.
Roll into elongated balls or potato shapes, and roll in the cinnamon and/or cocoa powder; stud with slivered almonds to form “eyes”. Place onto a cookie sheet and chill to set. Makes about 60.
