IMPOSSIBLE PEACH or NECTARINE STREUSEL PIE
about 4 sliced fresh peaches or nectarines
1 tsp. cinnamon ………………………………….....1/4 tsp. ginger
2 eggs………………………………………………..3/4 cup sugar or Splenda
2 TB caramel flavor liquid coffee creamer (can be sugar-free)
2/3 cup Bisquick
Streusel
1 TB cold butter, cut into cubes………………… 1/4 cup Bisquick
2 TB brown sugar or brown Splenda

Heat oven to 375°. Spray 9” pie pan with non-stick spray.
Put the peach/nectarine slices in pan. Sprinkle with cinnamon and nutmeg.
Whisk/beat remaining ingredients (except Streusel) until smooth. Pour evenly over peaches.
Make Streusel by cutting butter into Bisquick (with pastry cutter or 2 forks) and sugar until crumbly. Sprinkle evenly on top of peaches.
Bake until knife inserted in center comes out clean (about 35-45 minutes.)
