2 cups milk
1/4 cup melted butter
4 eggs
1 tsp. vanilla extract
1/2 tsp. caramel extract
1 cup brown sugar, firmly packed ~ OR~ 1/2 cup brown Splenda blend (sugar-free)
1/2 cup Bisquick

Preheat oven to 350 degrees. Combine all ingredients in blender; blend at high until smooth. Pour into greased/sprayed 9” or 10” pie pan (I recommend 10"). I put the pan onto a rimmed baking sheet in case there's any spill-over (usually when I carry the pan to the oven!) **
Bake for 40-45 minutes, or until a small sharp knife inserted in center comes out clean. (It may puff up and then drop a little as it cools). Refrigerate. Can serve with some whipped cream to dollop on top, and even a drizzle of caramel syrup over that! Serves 4-8 (only 4 if my husband is eating it)
