HONEY BUTTER Grilled CORN on the COB
4 ears of corn, shucked
1/2 cup (1 stick) butter, softened
2 TB honey........................................................................1/2 tsp. smoked paprika
1 tsp. Kosher salt............................................................1/2 tsp. black pepper
Shuck the corn and cut off ends. (If you want to do this earlier in the day, I put the shucked ears into a pan with water so it stays moist ~ turn the corn over a few times until you're ready to grill it)
Cut 4 squares of foil that will fit around an ear of corn and set out on the counter. Put an ear of corn on each one.
Mix together softened butter, smoked paprika, salt, pepper and honey in a small bowl.
Spread onto all sides of corn. Wrap securely in aluminum foil, twisting the ends.
Grill wrapped corn for about 15-20 minutes or until tender on a covered hot grill. You can serve it now ~ or, if you want an extra smoky flavor: unwrap corn, discard foil, and grill on the grates for a couple minutes to char the corn slightly on all sides.
