HONEY APPLE and Spiced RUM Stuffed ACORN SQUASH
1 acorn squash for 2 people ~ cut in half and seeded
butter (about 1 TB per acorn squash)....................honey
Spiced Rum.........................................................Kosher salt (to taste)
1 large apple (I left the peel on), diced per 1-2 whole acorn squash (depends on size of apple & squash)
NOTE: You can substitute apple or orange juice for the Rum, if you want (for the kids)

I lined a baking pan with foil (for easy cleanup) and put about 1/4" water in there. Put the acorn squash halves in the pan.
Toss together the diced apple with a pinch of salt, a few good dollops of honey, and as much Spiced Rum as you like. Fill the squash halves with the apple mixture. Put a little cube of butter (about 1/2 TB) on top of each one. Stick into the oven with whatever else you're making for dinner
(oven time is fine anywhere between 325-400, but remember to increase the time for lower temps. 325 will take at least an hour {probably closer to 1-1/2 hours}, and 400 will take about 35-45 minutes).
NOTE: To cook even faster, you can pre-bake the squash in the microwave ~ then just put the apples inside the top and stick into the microwave to heat those up. Or, put into the oven with whatever else in there (at whatever temperature), just to heat up the apples.
TO MICROWAVE: Put the cut acorn squash upside-down in about 1/2" water and microwave on high for about 8 minutes.
