HONEY APPLE Roasted MINI PUMPKINS
Mini pumpkins (1-2 per person) ~ recipe is for 4-5 pumpkins
honey ……………………............………. Butter
1 smallish apple, chopped small (I like peel on)
1-2 tsp chili powder**……….......……… salt and pepper to taste
Preheat oven to 375 degrees.
In a small bowl, combine 3 TB honey, plus 2 tsp melted butter, chopped apple, chili powder and salt and pepper to taste (these amounts are for 4-5 mini pumpkins). Set aside.
Carefully cut tops off of pumpkins and scoop out seeds and pulp. Fill each with an equal amount of honey-apple mixture. Cut 1 TB butter into 4 pieces and put a piece on top of the filling in each apple. Replace lid.
Put pumpkins in a square pan with about 1/2" water. Roast for 30-40 minutes or until pumpkins are easily pierced with a fork. Serve whole and scoop the flesh straight from the pumpkin.
NOTE: ** If you want a sweeter pumpkin, replace chili powder with cinnamon.
