Stick the pan of potatoes into the oven with whatever else you're baking at 350 (or 375), and have your main dish and side of potatoes done at the same time.
HERB SCALLOPED POTATOES
Can be Lactose-Free and/or Gluten-Free
2 small-medium (or 1 large) Russet potato, thinly sliced (I leave peel on) ~ (if your potatoes are pretty big, slice them in half lengthwise, before thinly slicing)
1/2 medium white or yellow onion, thinly sliced
1 TB fresh parsley, chopped…………….….1 tsp. dried thyme leaves, crushed if necessary
1-2 tsp. fresh rosemary, chopped (or 1/2 tsp. dried rosemary leaves, crushed)
I always use more herbs (especially fresh parsley)
3 TB flour (can be gluten-free)……………..….1 tsp. garlic, grated or minced
1/2 tsp. pepper………………………………..…1-1/2 tsp. Kosher or sea salt
2 TB butter (or extra-virgin olive oil, for lactose-free)
1-1/2 cups milk (I use unsweetened almond or cashew milk)
Extra chopped fresh parsley for garnish, if desired

Preheat oven to 350.
Spray a 2-1/2 qt. casserole dish generously with non-stick spray. Layer potatoes and onions in casserole (I made 3 layers) ~ sprinkling flour and herbs between each layer.
Put the milk, flour, garlic, butter/oil, salt and pepper into a microwave-proof measure (large enough so it won't boil over ~ I use a 4-cup pyrex measure) and heat for about 1 minute; whisk and microwave for another minute (until butter is just about all melted). Whisk to combine and pour sauce over all layers.
Cover and bake for about 1 hour. Remove cover and bake additional 20-25 minutes (until it's browned and bubbly). Let it sit about 5 minutes before serving. (if it appears "watery", it will firm up as it sits.)
NOTE: If you want to make this ahead and then reheat later in the microwave ~ just bake for about 10-15 minutes uncovered ~ then cover and keep until ready to reheat in the microwave. Reheat, covered, for about 4-5 minutes, and let it sit about 5 minutes before serving.
Makes about 2-3 servings. (My photo is with 2 fairly small potatoes and the recipe just about fills a 2-1/2 qt. casserole dish)
NOTE: If you’re baking something else for dinner at 375, stick the potatoes in for 45 minutes (covered); then uncover and bake for another 15 minutes or so uncovered.
