Healthy No-Churn PUMPKIN ICE CREAM
3 frozen bananas......................................................................1/2 cup pumpkin puree
1 TB honey ~ or~ brown sugar ~or~ brown Splenda blend (sugar-free)
1/2 cup milk (I like unsweetened vanilla almond milk)................1/2 to 1 tsp. cinnamon
1/2 tsp. vanilla or caramel extract

Peel and cut the frozen bananas into chunks (I put the frozen bananas under running water to peel; then cut off any left peel with a butter knife). Put 2 of the bananas, plus the rest of the ingredients, into your blender or food processor. Blend until it's creamy (you might need a rubber scraper to get it all down there, so it starts blending ~ and maybe scrape down halfway through too). Add the 3rd banana and keep blending (2-3 minutes) until it's thick and smooth. (If you add all 3 bananas at once, the blender probably won't have enough liquid to blend.) Pour into a Tupperware container and freeze for at least a couple of hours (soft-serve) or longer (and keeps well) for more frozen consistency.
