SALSA GUACAMOLE ** Contrary to the name, this version does NOT have tomatoes in it! I got the recipe from my friend Shell (who got it from her mother-in-law), to serve with homemade tamales at Christmas. You can also make this smoother, but Shell said they always make it chunky. NOTE: You can tell this version is authentic, because it's HOT (but you can reduce the number of jalapenos used) |
3 avocados - peeled, pitted, and mashed
1 lime, juiced …………………………….1 tsp salt (sea or Kosher)
1/2 cup diced onion ……………………..1-2 tsp crushed garlic
3-4 TB chopped fresh cilantro
1/2 to 1 tsp cayenne or 1 tsp. cracked red pepper flakes
2 Roma (plum) tomatoes, diced ……...1/2 tsp cumin
1 jalapeno pepper, seeded & finely minced (OPTIONAL)
In a medium bowl, mash together avocados, lime juice, and salt. Mix in rest of ingredients (jalapeno will add heat). Refrigerate 1 hour for best flavor, or serve immediately with tortilla chips.
TIPS: If you bury an avocado pit in the dip, it will help keep the dip from discoloring … If you want smoother Guacamole, just keep pulsing/blending/mashing until a smoother consistency.
GUACAMOLE SALSA
1/3 cup water ........................................1/4 teaspoon black pepper
3/4 cup chopped onion ..........................3 cloves garlic, minced
4 medium fresh jalapeno peppers, seeded, deveined, and finely minced
1 cup chopped fresh cilantro.................. 1 avocado, peeled and pitted
1/2 pound tomatillos, husked and chopped
Fresco cheese, crumbled (optional)
Place the water, pepper, onion, garlic, jalapenos, cilantro, avocado, and tomatillos in a blender, or the bowl of a food processor. Puree or process to desired consistency (smooth or chunky), adding more water as needed. Serve immediately.
Serve as a dip with chips, or use as a sauce for tamales or fajitas (sprinkle with a little crumbled Fresco cheese)
