GREEN Tomatillo PICO de GALLO
5-6 tomatillos (depending how big they are) ~ take off the outer husk, cut in half
1 bunch fresh cilantro
1 large poblano chili (seeded & cut into quarters)
1/4 to 1/2 white onion (depends how big it is)
1/2 to 2 jalapeno peppers, seeded (depends how HOT you want this)
1/2 tsp. dried oregano
1 tsp. extra virgin olive oil
1 tsp. Kosher salt

I like to do the cilantro first ~ cut off the excess stems and stick it into your food processor. Pulse until it's finely chopped. Scrape it out into a large bowl.
Put the tomatillos, onion, poblano and jalapeno peppers into your food processor (may want to do this in 2 batches). Pulse until small chopped (not super fine ~ you want some texture to them). Scrape it all into the bowl with the cilantro.
Add the oregano, olive oil and salt and mix well. Stick into a bowl and enjoy with chips! .. This is also good over enchiladas, tacos, or any other Mexican food.
