GREEN Christmas GRINCH COOKIES
1 box key lime cake mix (if you can't find that, you can use a white, yellow or butter cake and add 1 TB of lime gelatin powder)............................................................................2 eggs
2 TB flour...........................................................................…....1/2 cup vegetable oil
about 1 cup powdered sugar.....................................................little cinnamon hearts (30-36)
OPTIONAL: several drops green food coloring

Preheat oven to 350. Line baking sheets with parchment paper. ** Put the powdered sugar into a small, deep bowl and set aside.
Put the cake mix, 2 eggs, flour and oil (and lime jello powder, if using) into your electric mixer bowl. Beat on medium-high until it's well blended and gathers around the paddle.
Make about 1 tsp. (1/2 small cookie scoop) balls (I roll the scoops in my hand to make a ball) and put them on the prepared cookie sheets. Then, roll each ball around in the powdered sugar until well covered. Slightly flatten with your fingers and stick a cinnamon heart into the top of each one.
Bake for 9-12 minutes, or until they're firm (but not brown) and slightly crackled (10 minutes was perfect for me). Cool about a minute or so on the pan, before removing to racks or paper to cool completely. If you want, you can dust them with more powdered sugar when they're cool. Makes 30-36 cookies
