HOT COCOA & MARSHMALLOW COOKIES
1 cup (2 sticks) unsalted butter, at room temperature
1-1/2 cups sugar...…………………………………..2 eggs
2 cups all purpose flour...……………………….2/3 cups unsweetened cocoa powder
1 tsp vanilla extract...…………………………….3/4 tsp baking soda
1/2 tsp salt...………………………………………….1/2 cup mini marshmallows, divided
1/2 cup mini-morsel chocolate chips
edible silver glitter or white non-pareils

Preheat oven to 350. Line baking sheets with parchment paper and set aside. ** Put the glitter or non-pareils in a little bowl and set aside.
Beat the butter & sugar in your electric mixer for about 2 minutes, until light & fluffy. Add in one egg at a time and beat in the vanilla extract. Scrape down the sides of the bowl
In a separate bowl, combine flour, cocoa powder, baking soda and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the marshmallows and chocolate chips.
Use about 1 TB (or half of a small cookie scoop) of the dough and roll into balls. I stagger rows of 3 on the cookie sheet. Then go back and roll the balls in the glitter/non-pareils; flatten them down a little with your fingers so they're about 1-1/2" across.
Bake for about 7-9 minutes or until the edges are set. Let the cookies cool on the baking sheets a few minutes before removing to racks or paper to cool completely.
You should get about 2-1/2 to 3-1/2 dozen (depends how big you make them).
