This is another recipe that my mother would make for me when I was a child ** SUPER EASY **
FUDGEY BROWNIE PIE
2 eggs
1 cup sugar
1/2 cup butter
1/2 cup unsifted all-purpose flour
1/3 cup unsweetened cocoa powder (dark is best)
1 tsp. instant coffee granules
1/4 tsp. salt
1 tsp. vanilla
1/2 cup chopped nuts (optional)
Powdered sugar (optional garnish)
Ice cream & hot fudge sauce (optional toppings)
Beat eggs in a small bowl. Blend in sugar and add melted butter, combine flour, cocoa. Instant coffee and salt. Add to butter mixture. Stir in vanilla and nuts.
Spread in a lightly sprayed 8” pie pan. Bake at 350 degrees for 20-25 minutes or until almost set (pie will not test done). Cool, dust with powdered sugar ** (or drizzle with hot fudge sauce) and cut into wedges. Can also be served topped with ice cream and hot fudge sauce. 6 to 8 servings.
TIP: ** You can put a doily on top of the pie (or large metal cookie cutters) and sprinkle powdered sugar over it (or inside cutters) to create a design on top
