Thick CHOCOLATE GLAZE to drizzle over the top too ** This may become a family favorite!
1-1/2 sticks butter …………............................... 5 squares chocolate **
2-1/2 cups sugar ………….................................. 6 eggs
2 cups flour…………………............................... 2 tsp instant coffee powder
1/4 cup unsweetened cocoa powder (regular or Special Dark)
2 tsp vanilla extract
1 cup chocolate chips (your choice ~ I like mini-morsel)
Preheat oven to 350. Spray a bundt pan with non-stick baking spray (containing flour).
Melt butter and chocolate squares in a microwave safe bowl. In a mixing bowl, cream melted butter and chocolate mixture. Add in sugar and vanilla and beat until fluffy (about 2-3 minutes). Add in eggs, beating one at a time. Add flour,coffee powder and cocoa powder; stir just until combined. Fold in chocolate chips.
Pour batter into prepared pan. Bake for 65-75 minutes, or until brownie is set. (The top will be a bit crunchy and inside will be fudgey.) Cool; then drizzle with Fudge glaze and extra chocolate chips (if desired).
FUDGE GLAZE:
1/2 cup chocolate chips (milk, semi-sweet or dark)
2 TB dark corn syrup ……..............................… 1 TB butter
2 tsp heavy whipping cream
extra chocolate chips to sprinkle on top
Combine chocolate chips, corn syrup, and butter in a small saucepan. Stir over low heat until melted and smooth. Stir/whisk in cream. Spoon over cooled brownie bundt cake; sprinkle with additional chocolate chips.
** 1 square of baking chocolate = 1 oz, so can substitute 5 oz. chocolate chips (milk, semi-sweet or dark)
NOTE: You can use dark chocolate instead of semi-sweet chocolate (squares and/or chips). If you use semi-sweet chips, I prefer mini-morsels.
