3/4 cup milk ………………………… 1/4 cup white sugar
1 square (1 oz) unsweetened chocolate
* * *
1 tsp (usually 1 envelope) unsweetened gelatin (i.e. Knox)
1 TB cold water
* * *
1/4 cup coffee liqueur (i.e. Kahlua, Tia Maria)
1 cup heavy whipping cream
1 cup miniature marshmallows (white or colored)
1/2 cup chopped pecans
In small saucepan, combine milk, sugar and chocolate ~ bring to a boil over low heat, stirring constantly (flecks of chocolate may be visible)
Meanwhile, soften gelatin in cold water in small bowl; stir gelatin mixture into chocolate mixture until gelatin is dissolved (I like to whisk it). Cool. Stir in liqueur. Chill until partially set.
Meanwhile, whip the cream to stiff peaks. Fold into chilled chocolate mixture, along with the marshmallows and nuts. Spread in an 8” square or 8” loaf pan. Freeze until firm.
To serve, let stand about 10 minutes and cut into squares or slices. Serves about 8
