Fresh TOMATO and CARROT Pasta Sauce * Healthy *
8 oz. angel hair pasta (I used homemade fresh pumpkin pasta)
about 1/4 cup extra-virgin olive oil
1 TB crushed garlic
3 ripe Roma tomatoes, diced
2 carrots, grated
about 1-2 tsp fresh rosemary, minced
1-2 tsp Kosher salt and pepper (to taste)
fresh grated Parmesan cheese to garnish (optional)
Cook pasta according to package directions.
Meanwhile, saute and simmer rest of ingredients (except Parmesan cheese) in the olive oil, in a large skillet over medium heat. Cook, stirring occasionally, for about 3-4 minutes.
Toss with cooked pasta (add a little more salt, if necessary) and garnish with freshly grated Parmesan cheese. Serves 2-3
