Fresh STRAWBERRY MOUSSE
1 16-oz. container fresh strawberries
2 TB sweetened, condensed milk (NOT evaporated)..............................1/2 cup sugar
2 cups extra-heavy whipping cream
Wash and slice the stems off the strawberries. Put the strawberries, sugar and sweetened condensed milk into your blender (or food processor) and blend until totally pureed (about 2-3 minutes). You may need to do this in 2 batches. Set aside.
Pour cream into a mixing bowl and beat on high until soft (almost) peaks form. Gently fold the strawberry puree into the cream, with a rubber scraper, until everything is well combined.
Divide the strawberry mousse into about 10-12 dessert cups and refrigerate at least 30 minutes (or covered for several days).
