PEACH BRANDY SAUCE
3 cups coarsely chopped ripe peaches (about 3 large) ~ leave the peel on for texture & color
1 cup dark brown sugar
1 cup granulated sugar
1/3 cup brandy
2 teaspoons lemon or orange zest, grated

Add all ingredients to a large pot. Bring to a boil, over medium heat, stirring frequently. Reduce
heat and simmer for 25 to 30 minutes, or until sauce has thickened. Remove from heat. Let it cool a few minutes, then puree the mixture (blender or food processor) until smooth. (TIP: If you’re using your blender, do half at a time and hold the lid down, so the warm sauce doesn’t splash all over you.) Store the sauce in the refrigerator for up to a month
Serve over ice cream ~ waffles/pancakes ~ pound cake ~
Use as a glaze for chicken, ham or pork
